Fowey Hotel | Mitch Tonks & Mat Prowes
The Fowey Hotel is incredibly proud to have held this year’s Fowey Festival of Music and Word Society patrons lunch. This intimate 2 course affair was a private reception at Spinnakers Restaurant tucked away in the South West corner of the hotel.
We were joined by celebrity award winning chef and restaurateur Mitch Tonks, recently described by The Times newspaper as the ‘No1 man in Britain for fish’. He and Mat Prowes, co-own the award winning restaurant, The Seahorse in Dartmouth, and are both authors of the well-reviewed book by the same name. Heralded by The Independent, as ‘a fishmonger for the 21st century’ both Mitch Tonks and Mat Prowse are greatly admired by their peers.
The two course lunch consisted of a starter of Cuttlefish in Squid Ink Sauce with Polenta, followed by a main course of Hake Cooked in Basque Style with Sauce Romesco, and are recipes from The Seahorse book. However, Mitch and Mat were guests at this feast, and not in the kitchen. The kitchen team at Spinnakers was headed up by Brian Williams – Sous Chef, and seconded by David Coon, they took up the nerve racking task of cooking for their idols, their very own dishes for the new book. Tensions were high, especially when faced with ingredients even our most experienced chefs had never used.
According to Mitch, the accolade for the expertly executed dishes, goes solely to the Chefs in Spinnakers kitchen. The Chefs are extremely proud of themselves for their achievement and Mitch has kindly given them a signed copy of the Seahorses book.
